Lapsi Recipe from Madhya Pradesh, Fada Lapsi from Gujarat

A sweet delicacy from the state of Gujarat, Lapsi is a delicious dish and is loved all over the country! Unlike other regular Indian sweets, this is a healthy sweet dish and is made using broken wheat (Dalia), ghee and dried fruits along with some sugar. Apart from Gujarat, Lapsi is also something that has been a part of the Rajasthani cuisine too! As the state of Rajasthan has a war history, most of the dishes prepared in its cuisine are based on the fact that they could be easily made during the war and in the limited resources of the state. Lapsi is also known as sweet Dalia in various places and if you find the dry version of this dish too dry, you can choose to cook it with milk as well. That allows the dish to have a liquid texture and is easier to swallow. It is a traditional dessert recipe that’s made on special occasions like childbirth and child naming ceremonies in India, especially in Gujarat. People also make this dish in marriages as well. This dessert recipe leaves a lot of room for the cook to make any changes in the amount of sugar that goes into their Lapsi. It is prepared by roasting the broken wheat or Dalia in ghee until rich brown in colour. This way you will have an intense aroma in the Dalia with a flavour that no one can resist. Ingredients of Lapsi
2 cup broken wheat
3 almonds
5 cup water
2 tablespoon powdered green cardamom
20 raisins
1 1/4 cup ghee
1 1/4 cup sugar
10 cashews

How to make Lapsi

Step 1 Soak raisins and blanch the almonds
To prepare this delicious recipe, soak the raisins in water and keep aside till required further. Meanwhile, take a pan and add some water and almonds in it. Let the almonds boil for a minute or two. Once done remove the almonds and immediately put them in ice-cold water. Keep aside.

Step 2 Roast broken wheat in ghee
Then, take a deep bottomed pan, keep it on medium flame and heat ghee in it. Once the ghee is heated, add in the broken wheat and stir the mixture until light brown in colour. Add water to the pan and let the broken wheat cook until it gets tender and the water has almost vaporized.

Step 3 Cook the roasted dalia with sugar and water
Once the mixture has no water left in it, add sugar, cardamom powder, peeled and chopped almonds, soaked raisins, ghee, and water in the pan. Cook the mixture on low flame for about 10 minutes until the ghee is significantly visible at the sides of the pan.

Step 4 Garnish with dry fruits and serve hot
Once done remove the lapsi from flame and garnish it will the blanched almonds and cashews before serving.

Lapsi is a flavourful dish that can be made on any occasion. The process of making this dish is so simple that you cannot even imagine. However, you need to take care of some of the things before putting your kadhai over the flame…1. Make sure that you use a generous amount of ghee for roasting the broken wheat or Dalia. This will make the dish aromatic as well as flavourful. 2. You must take care of the fact that the Dalia is roasted on medium flame only, as the high flame can make it burn, which will not bring a good flavour to the dish. 3. You can also use jaggery instead of sugar to make Lapsi. This would make the dish more appealing. 4. One of the best parts about Lapsi is that it can be made in advance. However, before serving it to your guests, add a teaspoon of ghee and 2 tablespoons of milk over it and reheat it for 2-3 minutes. This will add a rich look and flavour to your dish.
