Panki Recipe from Gujarat

Yellow moong dal panki is gujrati cuisine made out of dal this is one of the healthy snack which can be given to kids , adults , ageold , or diabetic people , its cooked with banana leaf so we call it panki , it has to be served with banana leaf and we can serve with corriander chutney friends try this recipe you will love it

INGREDIENTS

  • Moong Dal 1 cup
  • 2Green Chilly finely chopped
  • 1tsp grated Ginger
  • Salt to taste
  • Oil for applying on leaves
  • 1Tbsp Curd
  • 1Tbsp gramflour
  • 2-3 Banana leaves
  • Finely chopped corriander
  • Salt to taste
  • 1Tsp eno fruit Salt

INSTRUCTIONS

  • ADD 1CUP OF YELLOW SPLIT MOONG DAL TO BOWL AND WASH WITH WATER 3-4 TIMES
  • ADD WATER AND SOAK FOR 4-5 HRS
  • REMOVE EXCESS WATER FROM DAL
  • TRANSFER SOAKED DAL TO MIXER JAR
  • ADD 1 TBSP OF DRAINED WATER TO GRIND DAL INTO PASTE
  • REMOVE GRINDED MOONG DAL IN SEPARATE BOWL
  • ADD FINELY CHOPPED GREEN CHILLY, GRATED GINGER AND SALT TO TASTE
  • ADD 1 TBSP OF EACHGRAM FLOUR AND CURD
  • STIR THOUROGHLY
  • ADD 1 TSP OF ENO AND SOME DROPS OF LEMON JUICE
  • ADD FINELY CHOPPED CORRIANDER
  • CUT BANANA LEAF IN ROUND SHAPES OR SQUARE SHAPES
  • APPLY OIL ON ONE SIDE OF BANANA LEAF
  • ADD TWO TBSP OF MOONG DAL BATTER
  • APPLY OIL ON OTHER LEAF AS SHOWN AND COVER ON BATTER GENTLY PRESS IT
  • HEAT NONSTICK PAN
  • COOK PANKI ON SLOW FLAME
  • GENTLY PRESS AFTER 5MINUTES
  • FLIP AND COOK FROM OTHER SIDE TOO
  • YOU CAN SEE BANANA LEAF COMES OUT CLEAN , MEANS OUR PANKI IS COOKED
  • REMOVE IN SERVING PLATE, PANKI HAS TO BE SERVED WITH LEAF
  • YOU CAN CHECK HOW BOTH THE LEAVES COMES OUT EASILY, SERVE THEM WITH GREEN CHUTNEY
