Kaapa Recipe from Uttarakhand

Ingredients of Kaapa
400 gm spinach
1 teaspoon cumin
1 teaspoon kasoori methi powder
1/2 cup milk
1 1/2 teaspoon whole wheat flour
1/2 teaspoon powdered turmeric
2 tablespoon vegetable oil
salt as required

How to make Kaapa

Step 1
Start by washing spinach in running water and then chop them finely on a chopping board. Transfer chopped spinach in a bowl and keep aside.

Step 2
Take a deep pan, add 1 tbsp. vegetable oil and heat it over medium flame. When oil bubbles rise, add cumin and when they splutter, add turmeric powder. Cook for few seconds.

Step 3
Now, add spinach and milk together. Cover the pan with a lid and cook over medium flame until spinach is tender and cooked. Use the back of a spatula to mash spinach. Mash till you get a semi-pureed mixture.

Step 4
Now, add whole wheat flour and mix the ingredients well. Ensure that there are no lumps formed. Sprinkle salt and cook over medium flame.

Step 5
Cook till bubbles starts to rise and kappa thickens. Meanwhile, heat the remaining oil in a small pan, add kasoori methi and add it immediately to kappa. Stir well and serve hot.
